Prepare the Mash: Finely chop the onions, carrots, and celery roots. Sauté the chopped vegetables until they soften. Blend the sautéed vegetables into a smooth mash.
Prepare the Fish: Sprinkle the fish with the juice of half a lemon, 1 tablespoon of spice mix , and chopped (or crushed) garlic. Let the fish marinate for 2 hours before cooking.
Cook the Soup: In a cauldron or deep pot, add the vegetable mash and enough water to fill two-thirds of the pot. Add the bay leaves, black peppercorns, celery leaves, parsley, chopped lemon, garlic, bell pepper, and ground paprika. Bring the mixture to a boil.
Add the Fish: When the soup starts boiling, add the fish soup seasoning (mixed in cold water to avoid lumps), and then add the fish. Cook at a boil for 45 minutes to 1 hour. Fifteen minutes before the end of cooking, add the cooked tomato sauce and white wine.
Final Adjustments: Once the soup starts boiling again, taste it and adjust the seasoning as needed: add more pepper for spiciness, more white wine for acidity, or more salt to taste. Let it simmer gently for another 15 minutes before serving.
