Recipe for Chicken Salad with Avocado, Black Beans, and Corn
Ingredients (for 4 people):
- 2 chicken breasts (boneless, skinless, grilled or sliced)
- 2 avocados, sliced
- 400 g black beans (cooked or canned, drained and rinsed)
- 2 cups cherry tomatoes, halved
- 2 fresh ears of corn, kernels removed (or 1 can of sweet corn, drained)
- 150 g arugula or mixed salad greens
- A bunch of fresh cilantro for garnish
- 1 lime, halved for extra freshness
For the dressing:
- 1/3 cup olive oil
- Juice of 1 lime
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 clove garlic, finely chopped
- Salt and freshly ground black pepper, to taste
Instructions:
- Prepare the chicken breasts:
- Season the chicken breasts with salt and pepper. Grill them on a barbecue or in a pan until fully cooked (about 6-7 minutes per side). Let them cool slightly, then slice into thin strips.
- Prepare the vegetables:
- You can lightly toast the corn kernels in a dry pan or leave them raw for a fresh taste.
- Slice the avocado, and halve the cherry tomatoes.
