Recipe for Chicken Salad with Avocado, Black Beans, and Corn

Ingredients (for 4 people):

  • 2 chicken breasts (boneless, skinless, grilled or sliced)
  • 2 avocados, sliced
  • 400 g black beans (cooked or canned, drained and rinsed)
  • 2 cups cherry tomatoes, halved
  • 2 fresh ears of corn, kernels removed (or 1 can of sweet corn, drained)
  • 150 g arugula or mixed salad greens
  • A bunch of fresh cilantro for garnish
  • 1 lime, halved for extra freshness

For the dressing:

  • 1/3 cup olive oil
  • Juice of 1 lime
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, finely chopped
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Prepare the chicken breasts:
