Recipe for Christmas Gingerbread Cookies with Icing
Ingredients:
For the cookies:
- 350 g all-purpose flour
- 150 g brown sugar
- 120 g softened butter
- 100 g honey
- 1 egg
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon nutmeg
- 1 teaspoon baking soda
- A pinch of salt
For the icing:
- 200 g powdered sugar
- 1 egg white
- A few drops of lemon juice
Preparation:
Making the dough:
- In a large bowl, combine the flour, cinnamon, ginger, cloves, nutmeg, baking soda, and a pinch of salt.
- In a separate bowl, beat the softened butter with the brown sugar until creamy. Add the honey and egg, and mix well.
- Gradually add the dry ingredients to the butter mixture, mixing until a smooth dough forms. If the dough is too sticky, you can add a bit more flour.
- Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.
Shaping and baking:
- Preheat the oven to 180°C and line a baking tray with parchment paper.
- On a lightly floured surface, roll out the dough to a thickness of 0.5 cm. Use cookie cutters to cut out various shapes and place them on the baking tray.
- Bake for 8-10 minutes, ensuring they remain soft. Remove from the oven and let them cool on the tray.
Making the icing:
- Beat the egg white with a few drops of lemon juice until frothy. Gradually add the powdered sugar, mixing until you have a thick and smooth icing.
- Put the icing in a decorating bag and decorate the cooled cookies as desired. Allow the icing to dry before serving.
