    Duck Breast

    Step1

    Score the skin side of the duck breasts several times, then season with salt and pepper.

    Step2

    Heat 2 tablespoons of peanut oil in a grill pan, place the duck breasts skin side down, and sear for 10 minutes, turning several times.

    Step3

    After searing, move the pan to the edge of the stove and deglaze with red wine. Let the pan sit for another 20 minutes. Thicken the sauce with a sauce thickener, and season with salt and pepper.

    Wash the sugar snap peas, peel and finely chop the garlic. Heat 2 tablespoons of peanut oil in another pan, add the garlic, and sauté lightly. Then add the sugar snap peas, season with a pinch of sugar, and toss in the garlic oil for 4 minutes.

    Step5

    Serve the duck breast with sugar snap peas and the wine sauce.
