    Prepare the Grill: Light the grill and adjust the vent so that the heat is low. Place a few smoking chips or fresh fruit tree branches on the grill.

    Smoke the Butter: Place the cold butter in a small grill-safe pot and put it on the smoky grill. Add a whole ancho chili, half a garlic clove, the lime halves, and the ginger slices to the grill. Smoke the butter and the other ingredients at around 100°C (212°F) for 30 minutes. Remove the chili, ginger, and garlic from the grill and chop them coarsely. Add the chopped ingredients to the sizzling butter and squeeze the juice from the smoked lime halves over the mixture. Remove the butter from the grill to prevent it from burning.

    Grill the Corn: Increase the grill temperature to high. Once the grill is hot, place the corn pieces on the grill. Brush the corn with the smoked herb butter and baste regularly. The corn is done when the pieces have a nice color all around.
