Briefly rinse the lamb ribs with some cold water and then pat them dry. Place the ribs in a shallow glass dish.
Wash the chili, remove the seeds, and finely chop it. Peel the garlic clove and press it through a garlic press. In a small bowl, mix the chili, garlic, lime juice, soy sauce, and sugar well. Pour the marinade over the ribs and refrigerate everything for at least 1 hour.
Before grilling in the oven, pat the remaining marinade off the meat. Halve the garlic bulb horizontally. Wash and dry the rosemary sprigs. Place the ribs along with the garlic bulb, rosemary, and oil in a grill pan and grill in the oven at 200°C for 4-5 minutes.
