Mixing almonds and sugar: In a large bowl, mix together ground almonds and powdered sugar. If using food coloring, add it at this stage.
Whip egg whites : In another bowl, whip the egg whites with a mixer until they form stiff peaks. Add a pinch of salt.
Adding sugar: Gradually add granulated sugar to the egg whites until you get a firm, glossy peak.
Adding vanilla and dry ingredients: Add vanilla extract to the egg whites. Then slowly fold in the almond and powdered sugar mixture, stirring gently until everything is combined.
Filling the piping bag: Transfer the mixture into a piping bag fitted with a round tip.
Shaping the Macarons: On the prepared baking sheet, pipe small mounds of the mixture, spaced about 2 cm apart.
Baking: Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the macaroons are firm to the touch and begin to lightly brown.
Cooling: Remove them from the oven and let them cool completely before serving.
