Original Margherita Pizza
In a small bowl, combine the active dry yeast, sugar, and warm water. Let it sit for about 5-10 minutes until the mixture becomes frothy.
In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic. Place it in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1-2 hours, or until it doubles in size.
Preheat your oven to the highest setting (usually around 475°F/245°C).
Punch down the risen dough and transfer it to a floured surface. Roll it out into your desired pizza shape and thickness.
Transfer the rolled-out dough to a pizza stone or baking sheet.
Spread the pizza sauce evenly over the dough, leaving a small border for the crust.
Arrange slices of fresh mozzarella over the sauce.
Bake in the preheated oven for about 12-15 minutes or until the crust is golden and the cheese is bubbly and slightly browned.
Remove from the oven, top with fresh basil leaves, drizzle with extra virgin olive oil, and season with salt and pepper to taste.
