Directions

Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Divide the dough into 4 equal parts, shape them into balls, cover with a clean kitchen towel, and let them rest for about 30 minutes.
Prepare the Filling: Prepare the Potatoes: Peel and grate the potatoes. Squeeze out any excess moisture using a clean kitchen towel or cheesecloth. In a large bowl, combine the grated potatoes, chopped onion, vegetable oil, salt, black pepper, paprika, and chopped parsley. Mix well.
Assemble the Pie: Roll Out the Dough: On a floured surface, roll out each dough ball into a thin sheet (as thin as you can without tearing it). If you have a large work surface, you can use your hands to gently stretch the dough further by pulling it from the edges.
