Traditional Bean Stew Recipe

Ingredients (for 4-6 people):

  • 500 g dried beans
  • 1 large onion, finely chopped
  • 2 carrots, sliced into rounds
  • 2-3 cloves of garlic, finely chopped
  • 2 bay leaves
  • 2 tablespoons tomato paste
  • 1 tablespoon ground paprika
  • 2-3 tablespoons oil
  • Salt and pepper to taste
  • Water or vegetable broth (enough to cover the beans)
  • Optional: smoked meat (such as ribs or sausage) for extra flavor

Preparation:

1. Preparing the beans:

  1. Soak the beans: Leave the beans in water overnight to soften. The next day, rinse and drain the beans.
  2. In a large pot, heat the oil and sauté the chopped onion until translucent. Add the garlic and carrots, and sauté for another 2-3 minutes.
  3. Add the beans to the pot, along with the bay leaves and ground paprika. Mix well.
  4. Add the tomato paste and pour in enough water or vegetable broth to fully cover the beans. If using smoked meat, add it now to infuse flavor during cooking.
  5. Bring to a boil over medium heat, then reduce the heat and simmer for 1.5 to 2 hours, or until the beans are tender. Stir occasionally and check the liquid level, adding more water as needed.
  6. Once the beans are cooked, season with salt and pepper to taste. If you prefer a thicker stew, mash some of the beans with a fork and let it cook for a few more minutes.

Serving:

  • Serve the warm bean stew with fresh bread, pickles, or a hot chili pepper to complete the meal.
