Traditional Bean Stew Recipe
Ingredients (for 4-6 people):
- 500 g dried beans
- 1 large onion, finely chopped
- 2 carrots, sliced into rounds
- 2-3 cloves of garlic, finely chopped
- 2 bay leaves
- 2 tablespoons tomato paste
- 1 tablespoon ground paprika
- 2-3 tablespoons oil
- Salt and pepper to taste
- Water or vegetable broth (enough to cover the beans)
- Optional: smoked meat (such as ribs or sausage) for extra flavor
Preparation:
1. Preparing the beans:
- Soak the beans: Leave the beans in water overnight to soften. The next day, rinse and drain the beans.
- In a large pot, heat the oil and sauté the chopped onion until translucent. Add the garlic and carrots, and sauté for another 2-3 minutes.
- Add the beans to the pot, along with the bay leaves and ground paprika. Mix well.
- Add the tomato paste and pour in enough water or vegetable broth to fully cover the beans. If using smoked meat, add it now to infuse flavor during cooking.
- Bring to a boil over medium heat, then reduce the heat and simmer for 1.5 to 2 hours, or until the beans are tender. Stir occasionally and check the liquid level, adding more water as needed.
- Once the beans are cooked, season with salt and pepper to taste. If you prefer a thicker stew, mash some of the beans with a fork and let it cook for a few more minutes.

- Serve the warm bean stew with fresh bread, pickles, or a hot chili pepper to complete the meal.
