Vegan Reform Cake Recipe
Ingredients:
For the cake layers:
- 300 g ground walnuts
- 300 g sugar
- 3 tablespoons flour
- 1 packet baking powder
- 250 ml sparkling mineral water
- 150 ml oil
For the filling:
- 1 liter plant-based milk (almond, soy, or any dairy-free milk)
- 100 g dairy-free cooking chocolate
- 200 g sugar
- 3 packets chocolate pudding mix
- 250 g margarine (vegan margarine)
- 150 g ground walnuts
For the glaze:
- 150 g dairy-free cooking chocolate
- 3 tablespoons oil
Preparation:
For the cake layers:
- In a large bowl, mix the ground walnuts, sugar, flour, and baking powder.
- Add the sparkling mineral water and oil, and mix everything until smooth.
- Pour the mixture into a greased and floured cake pan (24-26 cm in diameter).
- Bake in a preheated oven at 180°C for about 25-30 minutes, or until a toothpick comes out clean.
- Once baked, let the cake cool completely.
For the filling:
- In a pot, heat 800 ml of plant-based milk and sugar, and bring to a boil.
- In the remaining 200 ml of plant-based milk, dissolve the chocolate pudding mix until smooth and lump-free.
- When the milk boils, add the pudding mixture and cook over low heat, stirring constantly, until thickened.
- Remove from heat and add the dairy-free chocolate, stirring until fully melted. Let the filling cool.
- Once cooled, add whipped vegan margarine and ground walnuts, and mix well.
For the glaze:
- Melt the dairy-free chocolate with oil over a double boiler or in the microwave, stirring carefully to prevent burning.
Assembling the cake:
- Carefully cut the cooled cake layer in half to create two equal parts.
- Spread half of the filling evenly over the first layer.
- Place the second layer on top and spread the remaining filling over the top and sides of the cake.
- Pour the chocolate glaze over the cake and spread it evenly.
- Let the cake set in the refrigerator, preferably overnight, to allow the flavors to meld.
Serving:
- Serve the cake chilled, cut into slices. Optionally, garnish with ground walnuts or pieces of dairy-free chocolate.
